Khetika Transforms India's Food Supply Chain with Clean-Label, Honest Staples

Dr. Prithwi Singh - Khetika Founder

In a modern grocery aisle, convenience is abundant, but trust is dangerously scarce. Adulterated spices, heavily processed grains, and chemical-laden batters have slowly become the unacknowledged norm. Driven by a personal family health crisis, Dr. Prithwi Singh left behind a lucrative corporate career at BCG and Reliance to disrupt the broken food supply chain. Through Khetika, his clean-label food brand, he is rewriting the rules of FMCG by delivering single-origin, preservative-free staples straight from the farm to the modern Indian kitchen.

Dr. Prithwi Singh, co-founder and CEO of Khetika, recently joined the ELI Podcast to unpack the dark realities of food processing and share his blueprint for building an honest, transparent, and health-first food brand that is scaling rapidly across India.

The Normalization of Adulteration

Before launching Khetika, Singh worked extensively within the food and retail industries. However, the true wake-up call came when his mother was diagnosed with cancer. This deeply personal event pushed him to meticulously scan the everyday food items his family was consuming. What he discovered was alarming: almost every packaged staple was structurally compromised.

"Adulterated food has become the normal. We have become normalized to the level that whatever spices we are eating... nobody really bothers what goes into it and people just blindly trust the brand. But it is not okay."

According to Singh, there are four primary types of adulteration plaguing the packaged food supply chain in India today:

The Four Pillars of Food Adulteration

  • 1. Poor Raw Material Quality: Starting at the source, ingredients are often poorly stored, leading to fungal infestations and bacterial degradation before processing even begins.
  • 2. Chemical Additives: To reduce costs or improve appearance, brands frequently add artificial colors (like dyes in chili powder), taste enhancers, anti-caking agents, or polishing agents.
  • 3. Nutritional Degradation via Heat: High-temperature commercial grinding machines destroy volatile oils and heat-sensitive nutrients, degrading the food's inherent value and creating unwanted toxins.
  • 4. Chemical Preservatives: Ingredients like sodium benzoate are heavily relied upon to artificially prolong shelf life across the retail supply chain.

Achieving Longevity Without Chemicals

If chemical preservatives are the industry standard for extending shelf life, how does a clean-label brand survive the harsh realities of retail distribution? For Khetika, the answer lies in reimagining the entire manufacturing process rather than opting for cheap chemical fixes.

Khetika focuses on three core product categories: fresh batters and chutneys, spices, and dry fruits. In the fresh category, where competitors heavily rely on chemical stabilizers, Khetika identified water as the primary source of bacterial growth. By pasteurizing the water used in their batters and rigorously maintaining a cold chain from factory to shelf, they effectively halt bacterial growth naturally.

For their spices, Khetika circumvents preservatives through meticulous moisture control. By implementing traditional sun-drying techniques at the source and utilizing innovative aroma-lock packaging, they create an internal environment that natively resists spoilage while retaining the natural oils that give spices their authentic flavor.

The Khetika Sathi Program: Single Authentic Origin

Food is grown, not manufactured. To guarantee the purity of the final product, Khetika realized they had to bypass the fragmented middleman network and integrate directly with the farmers. This led to the creation of the Khetika Sathi Program (Sustainable Agriculture and Training Hub for Impact).

The 'Single Authentic Origin' Model

1. Geographic Standardization: Khetika sources specific ingredients exclusively from their most authentic native regions. For example, cumin is sourced directly from western Rajasthan, and turmeric (Haldi) comes exclusively from Sangli.

2. Direct Farmer Integration: Through rural Sathi centers, Khetika buys directly from farmers, influencing them to adopt Integrated Pest Management (IPM) practices to reduce chemical fertilizer reliance.

3. Strict In-House Testing: Turmeric sourced from Sangli is tested in-house to guarantee a minimum 3.5% curcumin content, ensuring medicinal and nutritional potency.

4. Traditional Processing: Utilizing traditional stone-grinding methods prevents high-temperature nutrient degradation, preserving natural volatile oils.

By standardizing the source rather than just standardizing the chemical additives, Khetika achieves what few FMCG giants can: genuine consistency rooted in nature.

Navigating the Clean-Label White Space

Despite competing with massive legacy brands like MDH, Everest, and Tata, Singh does not view the market through a lens of aggressive competition. He notes that the clean food segment currently accounts for less than 2% of the market. However, three massive macro-trends are colliding in India: an intense focus on health, a demand for kitchen convenience, and a fierce loyalty to the Indian palate.

"If you look from the clean-label lens, I don't see competition. I rather see there is a big white space and opportunity available where the customer wants to shift... As the economy is growing, people are not just looking for the cheapest alternative, they are looking for alternatives that are safe."

To capitalize on this, Khetika has built deep in-house capabilities across seven manufacturing plants in India, leveraging patented AI-based Grain Recognition Technology (GRT) to ensure absolute quality control without passing exorbitant premiums onto the consumer. By owning the supply chain end-to-end, they can offer clean-label products at prices only marginally higher (2-5%) than highly adulterated mass-market brands.

The Entrepreneur's Purpose

Armed with an $18 million Series B funding round, Khetika is aggressively expanding its omnichannel presence—scaling traditional trade, quick commerce, physical stores, and even exports. However, for Singh, the journey transcends mere scale and valuation.

Reflecting on the transition from the structured world of consulting to the chaotic, playbook-free environment of entrepreneurship, he emphasizes that purpose is the ultimate anchor.

"Money, name, and fame may entice you at some stage, but these things cannot carry you long," Singh reflects. "What carries you along is a purpose. Ensuring that India eats clean food, that farmers are trained and get better remuneration, and that soil health improves—that gives a huge motivation to build upon this journey."

Key Takeaways

  • Trust is the Ultimate Product: In a market flooded with chemically enhanced and heavily processed foods, absolute honesty regarding sourcing and ingredients is a massive competitive moat.
  • Innovation Replaces Chemicals: Extending shelf life doesn't require preservatives. Techniques like pasteurizing water, controlling moisture via sun-drying, and specialized packaging can naturally preserve food integrity.
  • Control the Source: You cannot guarantee the quality of the end product if you don't control the raw material. Khetika's single authentic origin model ensures both consistency and purity.
  • The Purpose-Driven Premium: As the Indian consumer grows more affluent, price sensitivity is giving way to health consciousness. Consumers are willing to pay a premium for safety, provided the brand clearly communicates its value proposition.
